Origin & Name

Named for a mountain pass

Peligroso 19 is a reference to a location in the Ali Chalmer novels — a mountain pass known for its difficulty and its views. The blend is named for that same combination: dangerous, beautiful, worth every step.

The coffee is extra dark — pushed past the point where most roasters stop. The beans come from the same volcanic-soil farms in Orizaba, Veracruz as the rest of the lineup. The difference is intention. Peligroso 19 is built for people who want the roast to be aggressive.

The result is a coffee that is genuinely complex. The smoke and dark spice are upfront. The charred oak is in the middle. The finish is long, dry, and surprisingly smooth — which is where the "dangerously smooth" description comes from. You expect bitterness. You don't get it.

Peligroso 19 is the roast we built for cold brew. The extra dark profile holds up beautifully over cold extraction — the smoke softens, the spice comes forward, and the result is a concentrate that is genuinely exceptional over ice.

Brew Guide

How to brew it right

Cold Brew

Best Method

Coarse grind, 1:8 ratio (75g coffee / 600g cold water), 16–18 hours in the refrigerator. Dilute 1:1 before serving. Peligroso 19 was built for this method — the smoke softens, the spice comes forward, the result is exceptional.

French Press

Best Method

Coarse grind, 4-minute steep, 93°C water. Full immersion brings out the oils and produces a rich, aggressive cup. The charred oak note is most pronounced with this method.

Espresso

Fine grind, 9 bars, 25–28 second pull. Produces an intense, smoke-forward shot. Not for the faint-hearted. Excellent as the base for a long black or americano.

Drip / Auto

Medium grind, standard settings. Works well for everyday brewing. The smoke and spice are present but more restrained than with immersion methods.
